I strive to do the best I can with the skills and information I have at the time.  As my skills and knowledge increase, the things I create evolve with them. I strongly believe that once I "know better," it becomes my obligation to do better. 

 

So, where am I in my bread journey? I'm having fun trying to make baked goods without relying on any added/refined sugars. Yes, this includes no honey or maple syrup! As many of us have probably noticed, sugar is the villain du jour, many saying it is on par with cigarette smoking. This is a concern for a lot of people, especially as we age. Through research and experimentation, I hope to offer healthy alternatives that still bring immense joy to the palate. 

 

Food is only one of many philisophical journeys I enjoy. Like a squirrel collecting nuts for the winter, I ferociously collect knowledge and apply it to all kinds of projects. Some of those projects last for years, while others only last for weeks. But for now, enjoy the bread while I'm making it, and please kindly bring to my attention anything that isn't working well so that I may seek ways to improve upon it.
